Great! So this week, we’re sharing a super easy and satisfying pudding recipe. I remember eating those Jell-O puddings all the time back when I was younger. The chocolate Oreo flavor was THE best. Since then Jonny and I have found a perfect replacement that’s full of fiber, vitamins and minerals. Best part is, it still tastes great!
Our chia pudding is a really unique treat, and it’s made with only four ingredients that are raw, paleo, and vegan friendly. It’s got a great texture, kind of like a tapioca or a rice pudding if you’ve ever tried that. Chia absorbs liquid and turns into a gel when you let it sit for a few hours. When mixed with the other ingredients, they turn into a chocolaty creamy textured pudding.
Prepare this little treat in just a few minutes before bed and wake up to a ready-made treat for your day. It’s a big win!

Yield: 2 servings
1 cup Nut Milk (almond or cashew work best)
1/4 cup Chia Seeds
2 Tbs Cacao Powder
2-4 Tbs Coconut Nectar (or your choice liquid sweetener)
1. In a small bowl combine all ingredients except sweetener.
2. Add sweetener spoon at a time to your liking.
3. Once all ingredients are well combined, place your covered bowl in the fridge.
4. Let rest over night or for at least 5 hours.
