I’ve been going a little overboard with chocolate chip cookies this week. Seriously, what’s better than a soft gooey chocolate chip cookie? It’s the mother of all treats!
That’s why it was totally necessary to make this one perfect. These paleo chocolate chip cookies are gluten and grain free and have a special ingredient to make them extra chewy; gelatin! I used Great Lakes brand, a high quality grass-fed gelatin that’s excellent for your gut and joints, and also supports hair, skin, and nail growth. They’re sweetened with some Canadian maple syrup, and have a healthy fix of 70% dark chocolate chips that just melt in your mouth.
You can’t go wrong with guilt-free chocolate chip cookies!
Chocolate Chip Softies
Prep time: 15 min
Cook time: 10-12 min
Total time: 25-30 min
1/3 cup Coconut Flour
1/2 cup 70% Dark Chocolate Chips
1/2 cup Coconut Oil
1 tbs Gelatin
1/4 cup Maple Syrup
1/2 tsp Baking Soda
1 tsp Vanilla
Pinch of Salt
1. Preheat oven to 350F.
2. In a large bowl combine the melted coconut oil with the maple syrup and vanilla.
3. In a separate bowl, combine all dry ingredients (except the chocolate chips) then mix into the wet ingredients from step 2.
4. Add the chocolate chips to your cookie dough and fold in gently.
5. Bake for 10-12 minutes until golden brown.
